Amanda A-mangia: Easy Easter Bunny cake

What you’ll need:

Cream cheese icing
Coconut
Madeira cake
Cake decorations or sprinkles

To make a madeira cake:

Cream cheese icing ingredients:

2 sticks of butter, softened
1 block of cream cheese, softened
450 grams of icing sugar
1 teaspoon of vanilla essence
1/4 cup of milk
Baking paper

Cream together butter and cream cheese.  Add icing sugar, vanilla essence and milk.  Stir together until creamy – do not whip. Take your madeira cake and cut it in half, spread your icing sugar on the top of the one half and place the two halves on top of each other. Then using a piece of cardboard wrapped in baking paper, place your cake on top of it. Continue icing the whole cake and add coconut all over. Decorate the cake with your choice of sprinkles and add bunny ears using paper or cutting round marshmallows in half. Place the cake on a tray with some Easter chocolate eggs, green cake sprinkles and voila! You have an Easter Bunny cake.
